Description
Roasting and caramelizing Leeks in the oven brings out their sweetness. Roasted Leeks will
go with just about any main dish you can think of.
Ingredients
4 Leeks about same length and width
4 tablespoons olive oil
1 teaspoon Kosher salt
½ teaspoon pepper
1½ teaspoon curry powder
Instructions
Preheat oven to 400 F
Trim off the root ends and tough top green leafy parts from the white stalk of leek. Keep
white stalk whole.Cut white stalk into half-lengthwise. Fan out layers of leek to separate it
out without pulling it apart. Hold it under running water and fan open the layers to wash
out any grits in between the layers, pat dry and set aside.
In a small bowl mix olive oil, salt, pepper and curry powder together. Arrange the leeks on a
lightly oiled baking pan. Bruch spice mix evenly over leeks. Cover with aluminum foil and
bake for 20-25 minutes (Leeks should be fork tender). Remove aluminum foil and continue
to bake for an additional 10 minutes or till the tops of leeks are golden brown.
