Description

A stew of seasoned ground beef, tomato sauce, fried potatoes, with raisins for a touch of sweetness and olives for a touch of salty/savory.

Ingredients

1 pound ground beef (85-15) 1 cup diced yellow onion 1 cup diced red bell pepper 1 tablespoon give or take to saute the onion and pepper 3-4 large garlic cloves, miced 1 packet Goya Sazon seasoning, (Coriander and Annatto) 1 teaspoon ground Cumin 1 teaspoon dried Oregano 1 teaspoon dried Parsley 2 Bay Leaves Salt & Pepper to taste ½ cup dry white wine (Can Substitute with Vegetable Stock) 1 cup tomato sauce 2 tablespoon dried raisins 20 Green Pimento Olives, whole or halves 1 large potato, peeled and diced (Boiled or Fried) If frying the potato you will need about 1 cup vegetable oil

Instructions

Coat the bottom of a large frying pan with olive oil over medium heat, Add the chopped red pepper and the chopped onion (If desired sprinkle and few pinches of Kosher salt) and saute for 2-3 minutes. Add the ground beef and saute until there is just a touch of pink, then add all the dried seasonings, stirring till the beef is well coated and fully cooked. Add the garlic and continue to saute 30 seconds, then add the wine and tomato sauce, raisins and olives,stirring till all ingredients are well coated. There should be enough liquid in the frying pan to just cover the top of the beef (If needed add ½ to a 1 cup of water). Bring to a boil, then reduce heat source and simmer covered for 20 minutes or until beef has reached desired tenderness. Add boiled or fried potatoes, tossing to coat in the sauce and serve.

Additional Comments

If you are going to boil the potatoes, put potatoes in a saucepan, cover with cold water, bring to a boil and cook until desired tenderness, drain and set aside.. If frying add one cup of vegetable oil into a small saucepan over medium high heat, once oil is hot carefully add the potatoes and fry till golden brown, remove to a plate and set aside.
