Description

Penne pasta in a creamy tomato vodka sauce.

Ingredients

16 ounces of Penne pasta 2-3 tablespoons extra virgin olive oil 8 ounces prosciutto or pancetta, diced ½ cup yellow onion, diced 3 garlic cloves, crushed or minced 1 24 ounce can of crushed tomatoes ½ cup Vodka cup heavy cream ½ cup parmigiano cheese Salt & Pepper to taste 1 tablespoon fresh oregano or ½ teaspoon dried oregano

Instructions

Heat oil in a separate large pot over medium heat. Add onion and prosciutto, saute 4 – 5 minutes, add garlic saute 1 minute longer. Decrease heat source to medium-low, add Vodka and allow alcohol to evaporate 3-4 minutes. Increase heat source to medium and add tomatoes, dried oregano and salt & pepper to taste. Bring sauce to a simmer, reduce heat source to medium-low and let simmer for 20 minutes, stirring occasionally. While the sauce is simmering, cook pasta according to packed directions. Stir cream into tomato sauce and mix well to incorporate. Add parmigiano cheese into tomato/cream sauce and allow to heat through. Add drained pasta to pot with sauce, toss to coat, while thinning sauce with a little pasta water as needed. Serve warm with more parmesan.

Additional Information

If you want to add a little heat and spice add ¼ teaspoon red pepper flakes (or to taste).
