Description
This dish goes by many names but my Mom called it "Party Chicken". Chicken wrapped in
bacon and dried beef in a condensed soup and sour cream sauce is the 1970’s on a plate for
me.
Chicken wrapped with bacon and dried beef, smothered in sour cream and condensed cream
soup.
Ingredients
8 skinless/boneless chicken breasts or skinless/boneless chicken thighs or a combination of
both (about the same size and thickness).
8 slices of bacon
About 3 ounces dried beef (20-25 slices)
1 cup sour cream
1 can (10.75 ounce) condensed cream soup, any type you like
Black pepper to taste
Instructions
Preheat oven to 300 degrees F
Add the can of cream of soup and 1 cup sour cream and mix to combine well and set aside.
Lightly spray the bottom of a 9x12 baking pan. Line the bottom of the baking pan with the
dried beef (If you want to wrap the chicken, reserve 8 slices of beef). Wrap a piece of chicken
with 1 slice of bacon and place on top of the dried beef. When all pieces of chicken are
wrapped, spoon the cream soup/sour/cream over the top of the wrapped chicken, sprinkle
black pepper over the top and bake for 3 hours.
Addition Comment
I am not sure why but my Mom always refrigerated this overnight before baking it so I do it
that way too but I don't think it is necessary. If you want to make this ahead and freeze,
once fully cooked, allow to cool and cover well. with plastic wrap and foil. To reheat remove
plastic wrap and loosely cover with foil, and place in a 350 F oven for 1 hour or until heated
through.
