Description
In my opinion this Garlic Butter Shrimp recipe is absolutely delicious. Aniana from Aniana TV
says the ala Dampa refers to the Dampa restaurant in Sucat Paranaque. After making this I
want to go to that restaurant!
Ingredients
1 to 1½ pounds medium sized raw shrimp (peeled and deveined)
1 tablespoon oil (enough to lightly coat the button of the pan you are using)
1 cup unsalted or salted butter (1 full stick). Using salted or unsalted butter only affects the
salt you may add with your final tasting. I used salted butter and did not add any additional
salt at the end.
1 full head of garlic (chopped)
1 cup Banana Ketchup/Sauce (Filipino Ketchup) my be labeled UFC ketchup sold in oust
Asian markets
1 tablespoon chili flakes (optional)
⅓ cup chopped scallion
Salt & Pepper to taste
2-3 tablespoons water if you desirer a thinner sauce
Instructions
Over medium heat coat the button of a large flying pan (Or add to the bottom of a wok if
using). Add 1 stick of unsalted butter and allow butter to melt, then add all the chopped
garlic and stirring constantly saute till garlic is golden brown (Remember to keep an eye on
the heat source and adjust as need not to burn the butter or garlic) Once garling is golden
brown remove a couple teaspoons of the garlic and reserve for garnish. Add the shrimp and
cook 2-3 minutes per side or until the shrimp have turned pink. Once the full body of the
shrimp is pink on both sides add the Banana Ketchup (Chili flakes if using) coat the shrimp
well in the sauce. If desired thin the sauce with a couple tablespoon water (I did not). Allow
the sauce to come to a low boil, add the scallion and stir to coat. then reduce the heat
source to low. Taste the sauce and adjust the salt & pepper taste (I added about a half
teaspoon black pepper).
Let simmer for an additional 2-4 minutes and serve.
