Description
In my opinion this chili recipe is everything a good chili should be.
Ingredients
3 jalapeños (more if you want more heat)
½ white onion
1-2 cloves of garlic
1 bunch Green onions
1/2 bunch cilantro
1 can Fire roasted Diced tomatoes (14.5) oz
1 can Goya red kidney beans (15.5) oz
1 can tomato sauce (15) oz
¾ can tomato paste (Of a 6 oz can)
1½ - 2½ packs of McCormick mild chili seasoning
1-1.5 lb ground beef (for the cook off I used 1.5 lbs)
½ pack of jimmy dean hot breakfast sausage
Sometimes I also add a small pack of stew meat (½ pound) chopped up (I did for the cook
off), if you do, use the full 2½ packs of seasoning (2 packs + 1 tablespoon and 1 teaspoon of
another pack).
Beer, beef stock or water
Extra seasoning for the meat (To taste) chipotle/adobo/cumin/chili powder/ garlic powder.
Mix and match what you like.
Instructions
The Jalapeño, garlic and onion I chop up in the food processor, but you don’t have to. Green
onions and cilantro I hand chop
Brown all your meat together, this is where I will add a little extra seasoning, chipotle ,
adobo, cumin, chili powder and garlic powder to taste. Once it’s browned, I will add a little
water( or beer, usually beer LOL!!), (enough to moisten all of the meat).and add the
seasoning packs. Stir that in, then add all the other ingredients .I don’t strain any of the
canned goods, all the

Additional Comments
If using a dutch oven after all the ingredients are in the pot, bring to just about the boil, then
reduce heat source and simmer for at least 2 hours stirring occasionally. If you want
partially covered, but stir every 10 minutes or so to make sure it does not stick and burn on
the bottom. I ended up taking the cover off for the last hour of cooking.
