Description
Chicken Croquettes are classic Dinner fare in many parts of the US and for many are a classic
childhood/comfort food favorite.
Ingredients
Ingredients for the Croquettes:
2 cup roasted chicken, shredded/chopped
1 10.5 oz can of condensed cream of chicken soup
6 oz box of seasoned stuffing mix
1 cup Plain/Seasoned if you prefer (to roll/coat croquettes)
1 large egg, beaten
1 teaspoon onion powder
½ teaspoon powdered chicken seasoning
Vegetable oil for frying, about an inch of oil in the frying pan
Gravy/Sauce:
1 10.5 oz condensed cream of chicken soup
1 cup milk (2% or higher)
Season to taste (I use ½ teaspoon onion and garlic powder and salt & pepper. Still until
heated.
Instructions
In a medium sized bowl mix the chopped chicken, condensed soup, stuffing mix, beaten egg
and the onion powder/chicken seasoning, cover and refrigerate for 4 hours or overnight.
Using about 4-6 oz of the mix form cone, pattie or round croquettes. Once all croquettes and
formed lightly coat in the breadcrumbs Using a heavy bottomed skillet add enough
vegetable oil to fill about ½ inch up the sides and bring oil to 350 degrees F. Add your
croquettes and fry till golden brown on all sides.
To make the Gravy/Sauce:
Add the 10.5 oz condensed cream of chicken soup,1 cup milk and seasoning to a saucepan
and stir until creamy and heated through.
Serves
4 - 6
Additional Comments
Oven method: Preheat the oven to 350 degrees F. Lightly butter the bottom of a baking dish,
add the croquettes and bake for 25-30 minutes or until they have begun to brown (Internal
temp should be at least 160 degrees F.)
Fried or baked serve over mashed potatoes, cooked egg noodles or even rice. Drizzle the
sauce over the croquettes of serve sauce on the side.
