Description
Blackberry Cobbler or any Cobbler for that matter is a sweet, tart and juicy fruit dessert
covered with a delicious biscuit type pastry. Generally served warm with ice cream. This
Blackberry Cobbler is one of our favorites.
Ingredients
Filling (Prepare first)
5 cups fresh blackberries (approximately 12-16 ounces). Frozen can be used, thaw overnight
and drain well.
Zest of half a lemon
Juice of half a lemon
½ - 1 cup sugar (Depending on sweetness of berries/taste
2 tablespoons + 1 ½ teaspoons cornstarch (For a total of 2 ½ tablespoons)
Rinse and drain berries. Add to a large bowl, sprinkle sugar, cornstarch, lemon zest and juice
over berries and gently toss till berries are coated. Set aside while making biscuits.
Preheat oven to 375 F while making biscuits
Biscuits:
2 cups all-purpose flour
1 ½ teaspoons baking powder
½ cup sugar
½ teaspoon kosher salt
¼ teaspoon cinnamon
½ cup whole milk
2 large eggs
1 cold stick unsalted butter (Grated, if you but in the freezer for about 10 minutes it will
make grating easier)
Instructions
In a large bowl add the flour, baking powder, sugar/salt and cinnamon and whisk together
till well combined.
Using a box grater, grate the stick of butter and add to the dry ingredient bowl. Toss until all
butter is coated with the dry ingredients.
In a separate bowl add the eggs and milk and whisk together till completely incorporated.
Add the whisked eggs and milk to the dry ingredients and stir until just combined (Be careful
not to overmix) dough will be thick and hold together. I add the wet to the dry in about 3
equal parts and gently mix till combined but can be added all at once.
Add the filling mixture to a 9x9 baking pan (No need to grease) in a single layer. Using a
scoop or 2 spoons drop about 3 tablespoons of biscuit dough over the top of your berries.
Repeat till all dough is gone (You should get 10-14 biscuits depending on the size of the pan).
Bake for 50-60 minutes (Check for brownness at 45 minutes) or until biscuits are browned on
top and cooked through.
Let cool for 10-15 minutes and serve.

Additional Comments
This recipe is great for almost any type and or combination of berries.
Serve with whipped cream or vanilla ice cream.
Serve hot, warm or cold.
