My Mom’s Apple Pie
Ingredients
Filling:
8 Granny Smith Apples, peeled and sliced
½ cup (1 stick) unsalted butter
3 rounded tablespoons of all-purpose flour
½ cup packed brown sugar (Light or Dark)
½ cup granulated white sugar
¼ cup water
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
⅛ teaspoon allspice
Egg wash:
1 large egg and 1 tablespoon water, beaten together
You will also need a double pie crust.
Instructions
Preheat oven to 450 degree F (See below)
Melt the butter in a large frying pan over medium heat. Add flour to the melted butter and
stir to form a past, while constantly steering. Cook until the raw flour smell is gone 1-2
minutes. Add the white & brown sugar, the water and bring to a boil. Reduce the heat source
to low, add the cinnamon, nutmeg and allspice and simmer for 3 - 5 minutes. Add peeled and
sliced apple and stir to coat. Continue to simmer for an additional 10-15 minutes stirring
apples 3 or 4 times while simmering.
Transfer apples and juice/sauce to your prepared pie plate and shell. Cover with the other
pie pastry, crimp the edges of the top and bottom shell together, make a few small vent
slices to allow steam to escape in the center of the top crust or use a lattice top crust. Brush
with egg wash and place the completed pie on a foil lined sheet pan. If desired, make a foil
collar and place around the pie plate to prevent over browning (Removing about halfway
through the baking time.
Bake on the middle rack for 15 minutes then reduce heat to 350 degrees F and continue to
bake for an additional 35-45 minutes or until the apples reach your desired tenderness.
Allow the pie to cool completely before serving.
